PAT KAI KAP MET MAMUANG HIMAPHAN

(Stir fry Chicken with cashew nut)



I decided to start a new section in my Blog and its about Thai cooking. I am no expert and often have to go back to the books to read line by line and sometimes in between the lines too . But there are a few dishes I have tried at home and I was told they had turned out well. So I decided to put it on here so that I can pick it up from where ever I am as I travel. Here is the first of them. And Oh!! Thai food is yummmmmmmy… I love it.


Serves : 4


Ingredients: Chicken Breast - 300 gms diced into small pieces


Vegetable Oil -2 Table Spoons


Chopped Garlic -Half Table Spoon


Freshly roasted Garlic -Half Cup

Four long red chilies ' Cut and dried

One Onion thinly sliced

Spring Onion - Half cup cut into small pieces

Naam Pla ( Thai Fish sauce) -1 Half Table spoons

Soya Sauce -1 Table Spoon

Coriander leaves - 4 to 5


Lime 'Half


Preparation time: 45 mins (with protective glasses on as I slice the Onion or 60 mins)


Cooking time: 12 mins


Procedure: In the Vegetable Oil fry the garlic till it turns yellow. Add the cut pieces of Chicken and fry till the colour turns white (for approximately 4 minutes). Add the cashew nuts, red chilies, onion an the spring onions along with the Soya sauce and the fish sauce and cook for four minutes. Squeeze the half a piece of lime into the preparation for taste and serve garnished with the Coriander leaves.
